If you have less of a sweet tooth, you could reduce the sugar a bit, but you don’t want to too much, as it helps give that wonderful stickiness.Personally, I couldn’t decide which was my favorite (though it was good to have the excuse to try a couple!

Lancashire natives have been known to put a dab of butter on top, or serve with a bite of cheese, but the pastry on its own is quite sufficient. I decided to go to the recipe we used when I did the afternoon tea class at John Whaite's cookery school and see if I faired any better.
Use a blunt knife and cut the butter in to the flour to mix, breaking up clumps but you still want the little pieces of butter in there. First test of one that exploded a bit, is very delicious even before they have sat in the fridge for a couple of days!! Even if he has them upside down in the photo! And there are still another couple that I want!!
